These Festive No-Bake Cranberry Orange Cheesecake Bites are creamy, tangy, and studded with a ruby-bright cranberry swirl. They come together in about 20 minutes of active time and are perfect for holiday gatherings.

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs (about 12 full sheets, crushed finely)
  • ¼ cup granulated sugar
  • ½ teaspoon orange zest (freshly grated, from about half a medium orange)
  • 6 tablespoons unsalted butter, melted
  • 1 cup fresh or frozen cranberries (if using frozen, no need to thaw)
  • ¼ cup granulated sugar
  • 2 tablespoons water
  • 1 teaspoon orange zest
  • 1 tablespoon fresh orange juice
  • 16 ounces (two 8-ounce blocks) full-fat cream cheese, softened to room temperature (I recommend Philadelphia for the creamiest texture)
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh orange juice
  • 1 tablespoon orange zest (from about one large orange)
  • 1 cup heavy whipping cream, cold
  • ¼ cup powdered sugar
  • Extra orange zest (for garnish)
  • Fresh cranberries (a few, halved, for garnish)
  • Mint leaves (tiny ones, for garnish)

Instructions

  1. Make the Cranberry Swirl: In a medium saucepan, combine the cranberries, ¼ cup sugar, and 2 tablespoons water. Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens, about 8-10 minutes. Stir in the 1 teaspoon orange zest and 1 tablespoon orange juice. Remove from heat and let it cool completely.
  2. Prepare the Crust: In a medium bowl, mix the graham cracker crumbs, ¼ cup sugar, and ½ teaspoon orange zest. Pour in the melted butter and stir with a fork until the mixture looks like wet sand. Spoon about 1 tablespoon of the crust mixture into each mini muffin cup. Press it down firmly with the back of a small spoon or a shot glass. Pop the pan in the fridge while you make the filling.
  3. Whip the Cream: In a large mixing bowl (or the bowl of your stand mixer), pour the cold heavy cream and add the ¼ cup powdered sugar. Beat on medium-high speed until stiff peaks form, about 3-4 minutes. Set aside.
  4. Make the Cheesecake Filling: In another large bowl, beat the softened cream cheese with the ½ cup granulated sugar until smooth and fluffy, about 2 minutes. Scrape down the sides of the bowl. Add the vanilla extract, 1 tablespoon orange juice, and 1 tablespoon orange zest. Beat for another minute until everything is well combined.
  5. Fold It All Together: Take a big spoonful of the whipped cream and stir it into the cream cheese mixture to lighten it up. Then, gently fold in the rest of the whipped cream with a rubber spatula. Fold until you don’t see any white streaks.
  6. Assemble the Bites: Spoon or pipe the cheesecake filling into each mini muffin cup, right on top of the crust. Fill them almost to the top.
  7. Add the Swirl: Drop small teaspoons of the cooled cranberry sauce onto the top of each bite. Use a toothpick or the tip of a knife to gently swirl it into the filling. Don’t over-swirl.
  8. Chill: Cover the pan loosely with plastic wrap and refrigerate for at least 4 hours, but overnight is better.
  9. Serve: Once fully chilled, run a thin knife around the edges of each bite and pop them out. Garnish with extra orange zest, a halved cranberry, or a mint leaf.

Notes

Room temperature cream cheese is non-negotiable. Don’t skip the powdered sugar in the whipped cream—it stabilizes it. Press the crust firmly. Let the cranberry sauce cool completely before adding. For clean bites, chill overnight. Store in an airtight container in the refrigerator for up to 5 days. Freezing is not recommended.
