These mini pumpkin cheesecakes are baked inside real mini pumpkins for a festive, no-crust dessert that’s creamy, rich, and perfect for Halloween parties. A kid-friendly, simple recipe that’s as fun to make as it is to eat.

Ingredients

Scale
  • 6–8 small pumpkins (about 2–3 inches tall)
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • Whipped cream, for topping (optional)
  • Caramel sauce, for drizzling (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Line a baking sheet with parchment paper if desired.
  2. Wash and dry each mini pumpkin. Using a sharp knife, carefully cut off the top 1/2 inch of each pumpkin. Set the tops aside. Use a small spoon or melon baller to scoop out the seeds and stringy pulp from the inside. Scrape the walls clean but keep the shell intact.
  3. In a medium mixing bowl, beat the softened cream cheese with a hand mixer on medium speed until smooth and creamy, about 1 minute. Add the granulated sugar and beat until combined, about 30 seconds. Scrape down the sides of the bowl.
  4. Add the pumpkin puree, room temperature egg, vanilla extract, pumpkin pie spice, and salt. Beat on low speed until fully incorporated and smooth. Do not overmix.
  5. Arrange the hollowed-out pumpkins on the prepared baking sheet. Divide the cheesecake filling evenly among the pumpkins, filling each almost to the top, leaving about 1/4 inch of space.
  6. Bake for 25-30 minutes. The cheesecake should be set around the edges but still slightly jiggly in the center. The pumpkins will look slightly wrinkled and may release some moisture.
  7. Remove from the oven and let the pumpkins cool on the baking sheet for 10 minutes. Then transfer to a cooling rack and cool completely, about 1 hour.
  8. Once completely cool, transfer to the refrigerator and chill for at least 2 hours, or overnight.
  9. Just before serving, top each mini pumpkin cheesecake with a dollop of whipped cream and a drizzle of caramel sauce if desired. Place the pumpkin tops back on at a jaunty angle for a festive look. Serve cold or at room temperature.

Notes

Don’t overmix the batter to avoid cracks. Use room temperature ingredients for a smooth filling. Bake on a preheated baking sheet for even cooking. Chill overnight for best flavor. If cracks appear, cover with whipped cream.
