Ingredients

Scale
  • 6 medium apples (about 2.5 pounds), preferably Honeycrisp or Granny Smith
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons all-purpose flour
  • 1/2 cup good-quality caramel sauce (for filling)
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup caramel sauce (for drizzling)
  • 1 teaspoon flaky sea salt
  • Optional: vanilla ice cream for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Peel, core, and slice the apples into 1/4-inch thick slices. Toss with lemon juice to prevent browning.
  3. In a large bowl, combine the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, and flour. Toss until coated. Stir in 1/2 cup caramel sauce.
  4. In a medium bowl, whisk together rolled oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Cut in cold cubed butter using a pastry cutter or fingertips until the mixture resembles coarse sand with some pea-sized butter chunks.
  5. Pour the apple mixture into a greased 9×13-inch baking dish and spread evenly. Sprinkle the oat crumble over the top. Drizzle the remaining 1/4 cup caramel sauce over the crumble and sprinkle with flaky sea salt.
  6. Place the dish on a baking sheet and bake for 40-45 minutes, until the filling is bubbling and the top is deep golden brown. If browning too quickly, tent with foil after 30 minutes.
  7. Let cool on a wire rack for at least 15 minutes before serving. Serve warm with vanilla ice cream if desired.

Notes

For extra crispy edges, bake an additional 5 minutes. Let the crisp rest at least 15 minutes before serving to allow the filling to thicken. Store leftovers covered in the refrigerator for up to 4 days. Reheat in a 350°F oven for 10-15 minutes to re-crisp the topping.
