Ingredients

Scale
  • Sharp cheddar cheese, cut into cubes
  • Gouda or smoked gouda, sliced or cubed
  • Cream cheese, softened
  • Brie wheel, room temperature
  • Salami, thinly sliced (Genoa recommended)
  • Prosciutto, torn into ribbons
  • 1 to 1.5 cups candy corn (classic orange-yellow-white kind)
  • Chocolate-covered pretzels
  • Dark chocolate squares
  • Caramel popcorn or caramel corn clusters
  • Red grapes, washed and separated into small clusters
  • Green apple slices, brushed with lemon juice
  • Dried cranberries or dried cherries
  • Pretzel sticks or pretzel twists
  • Rye crackers or water crackers
  • Pita chips
  • Honey
  • Whole grain mustard
  • Pumpkin butter

Instructions

  1. Place your large wooden board or platter on the counter. If using parchment paper, lay it down now.
  2. Set out 2-3 small ramekins or bowls for the honey, whole grain mustard, and pumpkin butter. Position them at different spots on the board.
  3. Cut sharp cheddar into 1-inch cubes and pile in one corner. Slice gouda into thin wedges and fan out next to cheddar. Place brie wheel whole in the center-left area. Dollop softened cream cheese into a small pile near the brie.
  4. Fold salami slices into quarters and arrange in a small cluster opposite the cheese. Tear prosciutto into bite-sized ribbons and drape over the salami.
  5. Scatter red grape clusters in two or three spots around the board. Fan out green apple slices near the brie. Sprinkle dried cranberries or cherries over open spaces.
  6. Arrange pretzel sticks in small bundles around the board. Stack rye crackers and water crackers in separate piles near the cheese. Tuck pita chips into remaining gaps.
  7. Sprinkle candy corn generously across the board, focusing on areas near the cheese and chocolate.
  8. Scatter chocolate-covered pretzels and dark chocolate squares around the board, mixing with candy corn. Add caramel popcorn in small clusters.
  9. Drizzle a little honey over the brie and gouda. Place whole grain mustard and pumpkin butter in their designated bowls with tiny spreaders.
  10. Fill any empty spots with extra candy corn, pretzels, or dried fruit. Serve immediately or cover loosely with plastic wrap and refrigerate for up to 2 hours before serving.

Notes

Cheese should be served at room temperature for best flavor. Take cheese out of fridge 30-45 minutes before assembling. Don’t overthink the arrangement – charcuterie boards look best when organic and slightly messy. For a small gathering of 4-6 people, use a 12×18-inch board. For 10-12 people, double quantities and use a larger board or two separate boards. Prep ingredients the night before to save time. The assembled board can sit at room temperature for up to 2 hours before serving. Do not refrigerate once assembled or crackers will get stale.
