Ingredients

Scale
  • 2 ½ cups (315g) all-purpose flour
  • 1 ¾ cups (350g) granulated sugar
  • ½ cup (113g) unsalted butter, softened
  • ½ cup (120ml) vegetable oil
  • 3 large eggs, room temperature
  • 1 cup (240ml) buttermilk, room temperature
  • 2 teaspoons vanilla extract
  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • ⅔ cup (100g) rainbow jimmies sprinkles
  • 1 ½ cups (339g) unsalted butter, softened (for frosting)
  • 4 cups (480g) powdered sugar, sifted (for frosting)
  • 3–4 tablespoons (45-60ml) heavy cream (for frosting)
  • 2 teaspoons vanilla extract (for frosting)
  • ¼ teaspoon salt (for frosting)
  • ½ cup (75g) rainbow jimmies sprinkles (for frosting, plus more for decorating)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans, line bottoms with parchment paper, grease parchment, and dust with flour.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat butter and sugar until light and fluffy, about 3-4 minutes.
  4. With mixer on low, stream in oil. Add eggs one at a time, beating well after each. Add vanilla and mix until combined.
  5. With mixer on low, add dry ingredients in three additions, alternating with buttermilk, starting and ending with flour. Mix just until combined.
  6. Gently fold in ⅔ cup rainbow jimmies with a rubber spatula using as few strokes as possible.
  7. Divide batter evenly between prepared pans. Bake for 25-30 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs.
  8. Cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
  9. For frosting: Beat 1 ½ cups softened butter until smooth. Add powdered sugar one cup at a time, then vanilla, salt, and heavy cream until spreadable. Beat on medium-high for 2-3 minutes. Fold in ½ cup rainbow jimmies.
  10. Place one cake layer on serving plate. Spread about ¾ cup frosting on top. Place second layer on top. Apply a thin crumb coat and refrigerate 15 minutes. Apply final coat of frosting and press extra sprinkles onto bottom edge and top.

Notes

Use rainbow jimmies (long rod-shaped sprinkles) not nonpareils to prevent bleeding. Room temperature ingredients are essential. Fold sprinkles gently to avoid color bleeding. Chill cake before slicing for cleaner cuts. Cake layers can be frozen for up to 3 months.
