Ingredients

Scale
  • 6 ripe avocados
  • 3 limes, juiced (about 6 tablespoons)
  • 1 medium red onion, finely diced (about 1 cup)
  • 2 Roma tomatoes, seeded and diced (about 1 cup)
  • 1 jalapeño, seeded and minced
  • 1/2 cup fresh cilantro, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 24 black olives, sliced into rounds
  • 1 red bell pepper, cut into small strips
  • 1/2 cup sour cream or Greek yogurt
  • Small pretzel sticks (optional)
  • 24 small cups or shot glasses (2-ounce size)
  • Tortilla chips or veggie sticks for serving

Instructions

  1. Cut each avocado in half lengthwise, remove the pit, and scoop the flesh into a large mixing bowl. Score the flesh in a grid pattern before scooping to make mashing easier.
  2. Use a potato masher or fork to mash the avocados to your desired consistency—slightly chunky is best.
  3. Squeeze the juice of 3 limes over the mashed avocado and stir immediately to prevent browning.
  4. Add the diced red onion, Roma tomatoes, minced jalapeño, chopped cilantro, salt, black pepper, and garlic powder. Stir until well combined. Taste and adjust seasoning as needed.
  5. Optional: Cover the bowl with plastic wrap pressed directly against the surface of the guacamole and refrigerate for 15-30 minutes to let flavors meld.
  6. Spoon the guacamole into 24 small cups, filling each about 3/4 full. Smooth the top with the back of a spoon.
  7. Spoon the sour cream or Greek yogurt into a small zip-top bag, snip off a tiny corner, and pipe two small circles on the top half of each guacamole cup for the eyes.
  8. Place two olive slices on each sour cream circle for the pupils. Use a strip of red bell pepper to create a Frankenstein-style mouth—straight line with small stitches on each side. Add small pepper strips for scars. Optionally, stick a small pretzel stick into each side of the cup for neck bolts.
  9. Serve immediately or refrigerate. Best served within an hour of assembly.

Notes

For best results, use ripe avocados that yield slightly to gentle pressure. Press plastic wrap directly onto the guacamole surface if making ahead to prevent browning. Assemble faces just before serving for the best presentation. The guacamole can be made up to 24 hours in advance.
