  • ½ teaspoon cinnamon (optional)
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper.
  2. Clean the pumpkin seeds: separate seeds from pulp, rinse in a colander under cold water, and pat dry with a clean towel.
  3. In a medium bowl, whisk together melted butter, maple syrup, 1 teaspoon flaky sea salt, and cinnamon or cayenne if using.
  4. Add the cleaned pumpkin seeds to the bowl and toss with a spatula until evenly coated.
  5. Spread the coated seeds in a single even layer on the prepared baking sheet.
