Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 large eggs, room temperature
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup apple cider
  • 1 cup powdered sugar, sifted
  • 2 tablespoons apple cider
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon unsalted butter, melted
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch cake pan and line the bottom with parchment paper.
  2. Brown the butter: Cut 1 cup unsalted butter into pieces and melt in a light-colored saucepan over medium heat, stirring occasionally. Cook until deep amber with brown specks and a nutty aroma, about 5-7 minutes. Immediately pour into a heatproof bowl and let cool for 10 minutes.
  3. In a large bowl, whisk together 2 cups flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, and 1/4 teaspoon cloves.
  4. In another bowl, whisk 2 eggs, 1 cup granulated sugar, and 1/2 cup brown sugar until smooth and slightly thickened, about 2 minutes. Whisk in cooled brown butter and 1 teaspoon vanilla.
  5. Pour wet ingredients into dry ingredients and stir gently with a rubber spatula until just combined. Slowly pour in 1 cup apple cider and fold gently. Batter will be thin.
  6. Pour batter into prepared pan. Tap gently to release air bubbles. Bake 40-45 minutes until a toothpick inserted in center comes out clean or with moist crumbs. Cool in pan on wire rack for 15 minutes, then invert onto rack, remove parchment, and cool completely (at least 30 minutes).
  7. Make glaze: Whisk together 1 cup powdered sugar, 2 tablespoons apple cider, 1/2 teaspoon cinnamon, 1 tablespoon melted butter, and a pinch of salt until smooth. Adjust consistency with more cider or sugar if needed.
  8. Once cake is completely cool, pour glaze over center and let cascade down sides. Spread evenly if needed. Let set 10 minutes before slicing.

Notes

Use a light-colored pan for browning butter to see color change. Room temperature ingredients prevent butter from seizing. Don’t overmix batter. Check doneness at 35 minutes. Glaze only when cake is completely cool for best appearance. Cake improves after a day as flavors meld. Freezes well unglazed for up to 3 months.
