This velvety, rich honeynut squash soup is elevated with nutty brown butter and simple ingredients. Perfect for gatherings, it looks fancy but comes together with minimal effort, making it a secret weapon for dinner parties and holiday dinners.

Ingredients

Scale
  • 2 to 3 pounds honeynut squash (about 4 to 5 small squash)
  • 4 tablespoons (56 grams) unsalted butter
  • 1 large yellow onion, roughly chopped
  • 4 to 5 garlic cloves, smashed
  • 4 cups (950 ml) vegetable or chicken broth
  • 1 tablespoon (15 ml) maple syrup
  • 1/2 cup (120 ml) heavy cream or coconut milk
  • Salt to taste
  • White pepper to taste
  • Optional garnishes: toasted pumpkin seeds, fresh thyme, extra brown butter drizzle

Instructions

  1. Preheat oven to 400°F (200°C). Cut honeynut squash in half lengthwise and scoop out seeds. Toss with 1 tablespoon olive oil and a pinch of salt. Place cut-side down on a parchment-lined baking sheet. Roast for 30 to 40 minutes until fork-tender.
  2. While squash roasts, make brown butter: Melt 4 tablespoons butter in a large pot over medium heat. Swirl occasionally until butter foams, turns golden, and smells nutty (about 5 to 7 minutes). Immediately pour into a heat-safe bowl to stop cooking.
  3. In the same pot, add a splash of olive oil over medium heat. Cook chopped onion with a pinch of salt for 6 to 8 minutes until soft and translucent. Add smashed garlic and cook 1 minute until fragrant.
  4. Scoop roasted squash flesh from skins and add to pot. Add broth, maple syrup, and half the brown butter. Stir and bring to a gentle simmer. Cook for 10 minutes to meld flavors.
  5. Remove from heat. Use an immersion blender to puree until smooth (or blend in batches in a regular blender).
  6. Stir in heavy cream or coconut milk. Season with salt and white pepper to taste. Adjust thickness with additional broth or water if needed.
  7. Ladle into bowls. Drizzle with reserved brown butter and optional garnishes. Serve hot.

Notes

Don’t rush the roasting—deep caramelization adds flavor. Watch brown butter carefully as it can burn quickly. Season in layers for best flavor. Soup improves after a day in the fridge. For dairy-free, use vegan butter and coconut milk. For spiced variation, add curry powder or garam masala when cooking onion.
