A quick and easy frozen treat made with creamy Greek yogurt, mixed berries, and a drizzle of honey. Perfect for hot summer days, this bark requires just 5 minutes of prep and delivers a refreshing, healthy snack.

  • 2 tablespoons (30 ml) honey
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (150 g) mixed berries (frozen or fresh; blueberries, raspberries, blackberries)
  • ¼ cup (10 g) freeze-dried strawberries (optional)
  • 2 tablespoons (30 g) dark chocolate chips (70% cocoa or higher, optional)

Instructions

  1. Line a baking sheet with parchment paper, letting it extend over the edges for easy lifting.
  2. In a small bowl, mix Greek yogurt, honey, and vanilla extract until smooth. Taste and adjust sweetness if desired.
  3. Spread the yogurt mixture onto the parchment paper in an even layer about ¼-inch thick, forming a rough 8×10-inch rectangle.
  4. Scatter the mixed berries evenly over the yogurt, pressing them in gently with your fingers.
  5. Sprinkle freeze-dried strawberries on top if using.
  6. Freeze for at least 3 hours or until completely solid (overnight works well).
  7. Break the frozen bark into irregular pieces using your hands or a knife.
  8. If desired, melt dark chocolate chips in a microwave-safe bowl in 20-second bursts, stirring between each, then drizzle over the bark pieces. Let set for 5 minutes before serving.

Notes

Use full-fat Greek yogurt for a creamy texture; nonfat yogurt becomes icy. Press berries gently into the yogurt to prevent them from falling off. Work quickly as the yogurt thickens. Ensure the baking sheet is level in the freezer for even freezing. Double the batch for later; store in a freezer bag for up to 1 month. Let bark sit at room temperature for 2-3 minutes if too hard to break.
