These savory mini Hot Brown sliders transform the classic Kentucky Hot Brown into bite-sized, easy-to-make appetizers featuring turkey, crispy bacon, and creamy Mornay sauce.

Ingredients

  • Mini slider buns or small dinner rolls (soft and slightly sweet; King’s Hawaiian preferred)
  • Thinly sliced turkey breast (leftover roasted or deli-sliced)
  • Crispy cooked bacon strips (thick-cut preferred)
  • Thin tomato slices (ripe but firm)
  • Leafy greens like baby spinach or arugula (optional)
  • Unsalted butter (3 tablespoons)
  • All-purpose flour (3 tablespoons)
  • Whole milk, warm (2 cups)
  • Grated Gruyère cheese (1 cup)
  • Shredded sharp white cheddar (½ cup)
  • Salt and freshly ground black pepper (to taste)
  • Pinch of cayenne pepper or smoked paprika (optional)

Instructions

  1. Heat a skillet over medium heat and cook bacon strips until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate to drain excess fat and set aside.
  2. Thinly slice tomatoes and slider buns horizontally, keeping the bottom halves intact. Toast buns lightly if desired.
  3. Melt 3 tablespoons of unsalted butter in a medium saucepan over medium-low heat. Stir in 3 tablespoons of all-purpose flour and cook for 1-2 minutes, whisking constantly to form a smooth roux without browning.
  4. Gradually whisk in 2 cups of warm whole milk, a little at a time, stirring continuously until the sauce thickens, about 4-5 minutes.
  5. Lower heat and stir in 1 cup grated Gruyère and ½ cup shredded sharp white cheddar until melted and smooth. Season with salt, black pepper, and a pinch of cayenne pepper or smoked paprika if using. Keep warm.
  6. Place bottom halves of buns on a baking sheet. Layer with turkey slices, bacon strips, a slice of tomato, and leafy greens if desired.
  7. Generously spoon warm Mornay sauce over each slider, coating the toppings and slightly spilling onto the bread.
  8. Top each with the bun’s crown and optionally sprinkle extra shredded cheese on top.
  9. Bake sliders in a preheated oven at 375°F (190°C) for 8-10 minutes until cheese is bubbly and buns are toasted.
  10. Remove from oven, let cool for a few minutes, then serve warm.
