  • 1 pound sirloin steak, cut into bite-sized pieces
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon smoked paprika (optional)
  • 2 tablespoons olive oil or avocado oil (for searing)
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon juice
  • 3 medium zucchinis, spiralized into noodles
  • Pinch of salt (for zucchini noodles)
  • 1 tablespoon olive oil (to sauté zucchini noodles)

Instructions

  1. Pat the steak bites dry with paper towels. Season with salt, pepper, and smoked paprika if using. Set aside.
  2. Spiralize the zucchinis and place noodles in a colander. Sprinkle with a pinch of salt and let sit for 10 minutes to release moisture. Squeeze dry with a kitchen towel.
  3. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add steak bites in a single layer and sear 2-3 minutes per side until browned and cooked to desired doneness. Remove and set aside.
  4. Reduce heat to medium. Add 3 tablespoons butter to the skillet. Once melted, add minced garlic and sauté 1-2 minutes until fragrant. Stir in lemon juice and chopped parsley.
  5. In a separate pan or the cleaned steak pan, heat 1 tablespoon olive oil. Add zucchini noodles and sauté 2-3 minutes until tender but still crisp. Season lightly with salt and pepper.
  6. Return steak bites to the pan with garlic butter sauce and toss to coat. Plate zucchini noodles and spoon steak bites over. Drizzle remaining garlic butter sauce on top.

Notes

Pat steak dry to ensure good sear. Do not overcrowd pan to avoid steaming. Dry zucchini noodles thoroughly to prevent sogginess. Add garlic after steak is mostly cooked to avoid burning. Cook zucchini noodles quickly to keep texture.
