Savory Fish Sauce Brown Butter Sauce

A quick and easy savory sauce combining nutty brown butter with umami-rich fish sauce, perfect for drizzling over seafood, roasted veggies, or rice.

  • 4 tablespoons unsalted butter (60 grams)
  • 2 teaspoons fish sauce (10 ml)
  • 1 clove fresh garlic, minced
  • 1 teaspoon fresh lime juice (5 ml), optional
  • Freshly ground black pepper, to taste
  • Chopped fresh herbs (cilantro or parsley), optional for garnish

Instructions

  1. Melt the butter in a small non-stick skillet over medium heat, stirring occasionally for 3-4 minutes.
  2. Brown the butter by continuing to cook until it foams and turns golden brown with a nutty aroma, about 2-3 minutes.
  3. Add the minced garlic and stir continuously for 30 seconds to 1 minute until fragrant but not browned.
  4. Remove the pan from heat and stir in the fish sauce.
  5. Add fresh lime juice if using and stir to combine.
  6. Season with freshly ground black pepper to taste and stir.
  7. Drizzle immediately over your dish or let cool slightly before storing.

Notes

Brown the butter slowly over medium heat to avoid burning. Add fish sauce off the heat to prevent overpowering saltiness. Garlic should be stirred constantly and not browned. Adjust fish sauce gradually to control saltiness. Can substitute vegan butter and tamari for a vegan version.
