A bright and juicy watermelon twist on the classic mojito, combining fresh watermelon juice, mint, lime, white rum, and sparkling water for a refreshing summer cocktail.

  • 2 cups (300g) fresh watermelon chunks or juice (blend for smoothness)
  • 1012 fresh mint leaves, plus extra for garnish
  • 2 ounces (60 ml) white rum per serving
  • 1 ounce (30 ml) freshly squeezed lime juice
  • 1 tablespoon (15 ml) simple syrup, adjust to taste
  • 2 ounces (60 ml) club soda or sparkling water per glass
  • Ice cubes, plenty
  • Optional: mint sprigs for garnish
  • Optional: watermelon wedges or lime slices for garnish

Instructions

  1. Cut about 2 cups (300g) of watermelon into chunks and blend until smooth. Strain through a fine mesh sieve to remove pulp if you want a smoother drink. Set aside. (Time: 5 minutes)
  2. Place 10-12 fresh mint leaves at the bottom of your highball glass. Add 1 tablespoon (15 ml) of simple syrup and gently muddle the leaves using a muddler or the back of a spoon to release the mint oils without shredding the leaves too much.
  3. Pour in 1 ounce (30 ml) of freshly squeezed lime juice and 2 ounces (60 ml) of white rum. Stir gently to combine with the muddled mint mixture.
  4. Fill the glass with ice cubes—enough to chill the drink properly without watering it down too fast.
  5. Pour in about 2 ounces (60 ml) of your prepared watermelon juice over the ice and rum mixture.
  6. Add 2 ounces (60 ml) of club soda or sparkling water for the mojito fizz.
  7. Give everything a gentle stir to combine the flavors. Garnish with a sprig of fresh mint and a small wedge of watermelon or lime slice on the rim.
  8. Serve immediately for the brightest flavor and fizz.

Use fresh mint leaves for best flavor and avoid over-muddling to prevent bitterness. Choose ripe watermelon for natural sweetness. Chill glasses before serving for extra refreshment. Adjust simple syrup and lime juice to taste. Make each drink fresh to keep mint vibrant and soda fizzy. For a smoother drink, strain the watermelon juice. A cocktail shaker can be used to blend lime, rum, and syrup before adding ice and soda but is not required.
