A quick and easy pizza sauce made from tomato paste, garlic, and herbs that delivers rich, concentrated flavor perfect for homemade pizzas.

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup water

Instructions

  1. Heat the olive oil in a small saucepan over medium-low heat for about 1 minute until hot but not smoking.
  2. Add the minced garlic and sauté gently for 30 seconds to 1 minute until fragrant, being careful not to brown it.
  3. Stir in the tomato paste and cook for 2-3 minutes to deepen the flavor and remove raw taste.
  4. Add oregano, basil, red pepper flakes (if using), sugar, and salt. Stir well to combine.
  5. Slowly pour in the water while stirring to loosen the paste into a sauce consistency.
  6. Reduce heat to low and simmer uncovered for 5-7 minutes, stirring occasionally until slightly thickened.
  7. Taste and adjust seasoning with more salt, sugar, or red pepper flakes if desired.
  8. Remove from heat and let cool slightly before using on pizza dough. Store leftovers in the refrigerator for up to 5 days.

Notes

Sauté garlic gently to avoid bitterness. Cooking tomato paste before adding water removes raw taste. Simmer sauce gently to thicken and meld flavors. Adjust seasoning to taste. Sauce can be made ahead and refrigerated or frozen.
