  • Salt for pasta water seasoning
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter, divided
  • 3 tablespoons extra virgin olive oil
  • 5 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Juice of 1 large lemon (about 3 tablespoons)
  • 1/4 cup dry white wine or low-sodium chicken broth
  • 1/4 cup chopped fresh parsley
  • Freshly ground black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add 1 tablespoon of salt for every 4 quarts of water. Cook linguine according to package instructions, about 9-11 minutes, until al dente. Reserve 1/2 cup of pasta cooking water before draining.
  2. While the pasta cooks, pat shrimp dry and season lightly with salt and pepper.
  3. Heat 2 tablespoons butter and olive oil in a large skillet over medium-high heat. Add minced garlic and red pepper flakes; sauté for 30 seconds until fragrant but not browned.
  4. Add shrimp in a single layer. Cook for 2 minutes without stirring until pink on the bottom, then flip and cook for another 1-2 minutes until opaque.
  5. Remove shrimp from pan and set aside. Lower heat to medium, add white wine or broth to deglaze the pan, scraping up browned bits. Simmer for 1-2 minutes to reduce slightly.
  6. Stir in remaining 2 tablespoons butter and lemon juice. Add chopped parsley and season with black pepper. If sauce is too thick, whisk in reserved pasta water a tablespoon at a time until silky.
  7. Return shrimp to the pan and toss to coat in sauce. Add drained linguine directly to the skillet and gently toss to combine.
  8. Serve immediately, garnished with extra parsley and lemon wedges if desired.

Notes

Do not overcrowd the pan when cooking shrimp to avoid steaming. Use fresh garlic for best flavor and add it after butter and oil are warm. Reserve pasta water to adjust sauce consistency. Fresh lemon juice brightens the dish. Avoid overcooking shrimp to keep them tender.
