Instructions

  1. In a large heavy-bottomed pot or Dutch oven, melt 2 tablespoons of butter over medium heat. Add diced onion, celery, and carrots, sauté for about 5 minutes until softened and fragrant.
  2. Stir in minced garlic, dried thyme, and parsley. Cook for an additional 1 minute until garlic is aromatic but not browned.
  3. Nestle chicken thighs into the pot and pour in 6 cups of chicken broth. Season lightly with salt and pepper. Bring to a gentle boil over medium-high heat.
  4. Reduce heat to low, cover, and simmer for 25-30 minutes until chicken is cooked through and tender.
  5. Remove chicken from broth and shred meat into bite-sized pieces, discarding bones. Set aside.
  6. In a medium bowl, whisk together flour, baking powder, and salt. In a separate bowl, combine buttermilk and melted butter. Pour wet ingredients into dry and stir gently until just combined; do not overmix.
  7. Return shredded chicken to simmering broth. Adjust seasoning with salt and pepper.
  8. Drop spoonfuls of dumpling batter onto the simmering broth surface using a spoon or small ice cream scoop.
  9. Cover pot tightly and let dumplings steam for 15 minutes without lifting the lid.
  10. Check dumplings; if tops spring back when touched, they are done. If needed, cook an additional 5 minutes.
