Juicy chicken breast chunks and colorful veggies are marinated in a tangy Greek yogurt BBQ sauce, then air fried to caramelized perfection for a quick, healthy, and family-friendly dinner. These skewers deliver classic BBQ flavor with minimal mess and are perfect for busy weeknights or meal prep.

  • 2/3 cup plain Greek yogurt
  • 1/2 cup BBQ sauce (your favorite brand)

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 large red bell pepper, cut into 1.5-inch pieces
  • 1 large yellow bell pepper, cut into 1.5-inch pieces
  • 1 medium zucchini, sliced into 1/2-inch rounds
  • 1 medium red onion, cut into 1.5-inch chunks
  • 8 ounces button mushrooms, halved (optional)
  • Additional BBQ sauce for brushing (about 3-4 tablespoons)
  • Chopped fresh parsley or cilantro for garnish (optional)
  • Lemon wedges for serving

Instructions

  1. In a large bowl, whisk together Greek yogurt, BBQ sauce, olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper to make the marinade.
  2. Add chicken breast pieces to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 15 minutes, up to 2 hours.
  3. While the chicken marinates, chop all veggies into bite-sized pieces. Toss veggies in a separate bowl with a little olive oil, salt, and pepper.
  4. Thread chicken and veggies alternately onto soaked bamboo or metal skewers, leaving a bit of space between pieces.
  5. Preheat the air fryer to 380°F for 2-3 minutes.
  6. Arrange skewers in a single layer in the air fryer basket. Air fry for 10-12 minutes, flipping halfway through.
  7. Pause the air fryer 2 minutes before the end, brush extra BBQ sauce over the skewers, and finish cooking.
  8. Check that chicken is cooked through (internal temp 165°F, juices run clear).
  9. Transfer skewers to a platter, sprinkle with chopped herbs, and serve with lemon wedges.

Notes

For best results, cut chicken and veggies into uniform pieces for even cooking. Soak wooden skewers in water for 20 minutes to prevent burning. Marinate chicken for at least 15 minutes for maximum tenderness. If using a different protein or making vegetarian, adjust cook time as needed.
