  • 1/2 cup (100g) packed brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 3/4 cup (95g) all-purpose flour (or gluten-free flour blend)
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (175g) chocolate chunks, preferably semi-sweet or dark
  • Optional: 1/4 cup chopped nuts (walnuts or pecans)
  • Optional: pinch of sea salt flakes

Instructions

  1. Preheat your oven to 350°F (175°C). Place your cast iron skillet inside while it heats to get it nice and warm.
  2. In a mixing bowl, beat 1/2 cup softened unsalted butter with 1/2 cup packed brown sugar and 1/4 cup granulated sugar until light and fluffy (about 2-3 minutes).
  3. Add 1 large egg and 1 teaspoon pure vanilla extract. Mix until combined, scraping down the sides.
  4. In another bowl, whisk 3/4 cup all-purpose flour, 1/4 teaspoon baking soda, and 1/4 teaspoon salt.
  5. Slowly add the dry ingredients to the wet mixture. Stir until just combined; do not overmix.
  6. Gently fold in 1 cup chocolate chunks evenly throughout the dough.
  7. Carefully remove the hot cast iron skillet from the oven using oven mitts. Lightly grease the skillet with butter or non-stick spray.
  8. Transfer the cookie dough into the skillet and gently press it evenly to fill the pan.
  9. Bake for 20-25 minutes until edges are golden brown and firm but the center remains soft and gooey.
  10. Let the cookie cool for 5-10 minutes before serving to allow the center to set but remain melty.

Notes

Do not overmix the dough to keep the cookie tender. Use room temperature ingredients for best results. Watch baking time closely to maintain a gooey center. Optional toppings like sea salt flakes enhance flavor. For less gooey center, bake a few minutes longer.
