  • 2 large eggs, room temperature
  • 1/3 cup vegetable oil or melted butter (80 ml)
  • About 1 cup powdered sugar (120 g) for dusting
  • 1 tsp vanilla extract (optional)
  • Optional add-ins: chocolate chips or chopped nuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the fudgy brownie mix, eggs, oil or melted butter, and vanilla extract. Beat with a hand mixer or whisk until smooth and glossy, about 2-3 minutes. The batter will be thick.
  3. Chill the dough in the refrigerator for 30 minutes (optional but recommended).
  4. Scoop dough using a tablespoon or small cookie scoop. Roll each portion into a smooth ball and generously coat each ball in powdered sugar.
  5. Place the sugar-coated dough balls evenly spaced on a baking sheet lined with parchment paper or silicone mat. Bake for 10-12 minutes until edges are set but centers look slightly soft. Let cool on the baking sheet for 5 minutes before transferring to a cooling rack.

Notes

Chilling the dough is optional but helps control spread and improves shape. Do not skip the powdered sugar coating for the signature crinkle effect. Avoid overmixing the batter to keep cookies tender and fudgy. Bake until edges are set but centers remain slightly soft for best texture. Store in an airtight container with a slice of bread to keep cookies soft. Freeze baked cookies for up to 3 months.
