A quick and refreshing salad combining juicy watermelon, salty feta, fresh mint, and zesty lime for a perfect summer dish.

Ingredients

  • 4 cups watermelon, cubed (about 600 grams)
  • 1 cup feta cheese, crumbled (about 150 grams)
  • 1/4 cup fresh mint leaves, roughly chopped
  • Juice of 2 limes (about 60 ml)
  • 2 tablespoons extra virgin olive oil
  • Pinch of salt (optional)
  • Freshly ground black pepper, to taste

Instructions

  1. Cube the watermelon into bite-sized pieces using a sharp knife. Keep the watermelon chilled beforehand for extra refreshment.
  2. Roughly chop the fresh mint leaves.
  3. In a small bowl, whisk together the lime juice, extra virgin olive oil, salt, and freshly ground black pepper. Adjust seasoning to taste.
  4. Place the watermelon cubes in a large mixing bowl. Sprinkle the crumbled feta cheese evenly over the top and add the chopped mint.
  5. Pour the lime-olive oil dressing over the salad and gently toss with a spoon or spatula to coat without breaking up the watermelon or feta.
  6. Serve immediately or refrigerate for up to 30 minutes to let flavors meld. Best served slightly chilled but not too cold.

Notes

Keep watermelon and feta chilled until serving to maintain freshness. If feta is too salty, rinse lightly under cold water and pat dry. Toss salad just before serving to avoid watery texture. Fresh mint is recommended over dried for best flavor. For vegan option, substitute feta with dairy-free cheese or marinated tofu.
