Fresh Ricotta Toast

Ingredients

  • Fresh ricotta cheese (whole-milk or part-skim)
  • Bread (crusty sourdough, multigrain, or rustic country loaf)
  • Extra virgin olive oil, for drizzling
  • Sea salt flakes, a pinch
  • Local honey (for honey & fresh berries topping)
  • Fresh strawberries or blueberries
  • Lemon zest
  • Ripe cherry tomatoes
  • Fresh basil leaves
  • Cracked black pepper
  • Balsamic glaze
  • Ripe avocado slices
  • Red chili flakes
  • Lime juice
  • Toasted sesame seeds
  • Thinly sliced smoked salmon
  • Fresh dill
  • Capers
  • Fresh or dried figs
  • Chopped toasted walnuts
  • Aged balsamic vinegar

Instructions

  1. Toast 4 slices of your chosen bread until golden brown and crisp, about 3-4 minutes per side on a grill pan or 2-3 minutes in a toaster.
  2. While the bread is still warm, spread about 3 tablespoons (45g) of fresh ricotta evenly on each slice.
  3. Add your favorite topping from the five variations: honey & fresh berries; tomato & basil; avocado & chili flakes; smoked salmon & dill; or fig & walnuts.
  4. Lightly drizzle extra virgin olive oil over each toast and sprinkle with a pinch of flaky sea salt and freshly cracked black pepper if desired.
  5. Serve immediately while the toast is still crisp and toppings vibrant.

Notes

Use sturdy, crusty bread like sourdough or country loaf to prevent sogginess. Add delicate toppings like smoked salmon or fresh fruits just before serving. Toast bread to a medium crispness for best texture. For vegan versions, use dairy-free ricotta and substitute honey with maple syrup or agave.
