  • 2 medium firm cucumbers (English cucumbers preferred)
  • 8 oz full-fat cream cheese, softened
  • 2 tablespoons finely chopped fresh dill
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: grated Parmesan cheese
  • Optional: finely chopped smoked salmon

Instructions

  1. Slice the cucumbers lengthwise into thin strips about 1/8 inch thick using a mandoline or sharp knife.
  2. In a mixing bowl, combine softened cream cheese with dill, chives, parsley, lemon juice, garlic powder, salt, and pepper. Mix until smooth and well blended.
  3. Lay cucumber slices flat on a cutting board and spread a thin, even layer of the cream cheese mixture on each slice.
  4. Starting at one end, carefully roll each cucumber strip tightly without squeezing out the filling. Use plastic wrap if needed to help roll and hold the shape.
  5. Place the rollups seam-side down on a plate or tray, cover with plastic wrap, and refrigerate for at least 15 minutes.
  6. Just before serving, slice each roll into 1-inch pinwheels and arrange on a platter. Garnish with extra fresh herbs if desired.

Notes

Pat cucumber slices dry before spreading cream cheese to avoid soggy rollups. Soften cream cheese to room temperature for easier spreading. Refrigerate rollups before slicing to help them hold their shape. Can be made ahead and stored tightly covered in the fridge for up to 1 day. Substitute dairy-free cream cheese for vegan or lactose-free option.
