A quick and easy avocado toast on toasted everything bagels topped with a medley of crunchy toppings for a satisfying and flavorful breakfast or snack.

Ingredients

  • Everything bagels, fresh and slightly toasted
  • Ripe avocados, mashed or sliced
  • Everything bagel seasoning (store-bought or homemade mix with sesame seeds, poppy seeds, garlic, and onion flakes)
  • Toasted pumpkin seeds
  • Chopped radishes
  • Thinly sliced red onions
  • Sea salt flakes
  • Freshly cracked black pepper
  • Fresh lemon juice (about 1 teaspoon per avocado)
  • Extra virgin olive oil (optional)
  • Optional extras: crumbled feta cheese, microgreens or fresh herbs like cilantro or parsley, red pepper flakes

Instructions

  1. Cut fresh everything bagels in half using a sharp knife.
  2. Toast bagels until golden brown and crisp: about 2-3 minutes in a toaster or 5-7 minutes in a 375°F (190°C) oven.
  3. While bagels toast, cut avocados in half, remove the pit, and scoop the flesh into a bowl.
  4. Add a squeeze of fresh lemon juice (about 1 teaspoon per avocado) to the avocado to prevent browning.
  5. Mash avocado with a fork until creamy but still a bit chunky.
  6. Thinly slice radishes and red onions.
  7. Toast pumpkin seeds lightly in a dry skillet over medium heat for 2-3 minutes, stirring frequently.
  8. Spread a generous layer of mashed avocado over each toasted bagel half.
  9. Sprinkle a generous pinch of everything bagel seasoning over the avocado.
  10. Scatter toasted pumpkin seeds, radish slices, and red onions evenly over the avocado.
  11. Season with sea salt flakes and freshly cracked black pepper to taste.
  12. If using, add crumbled feta cheese and microgreens.
  13. Drizzle extra virgin olive oil over the top for richness and shine.
  14. Add a pinch of red pepper flakes if desired for heat.
  15. Serve immediately for best texture and flavor.
