A refreshing and hydrating mocktail combining fresh coconut water, pineapple juice, and frozen fruit ice cubes for a tropical, subtly sweet drink perfect for any occasion.

  • 1 cup (240 ml) fresh coconut water, natural and unsweetened
  • 1/2 cup (120 ml) pineapple juice, freshly squeezed or canned without added sugar
  • 1 cup (150 g) frozen mixed fruit (berries, mango, pineapple chunks)
  • 1 tablespoon (15 ml) fresh lime juice
  • 1 teaspoon honey or agave syrup (optional)
  • A handful of fresh mint leaves for garnish
  • Ice cubes (plain) to top off the drink if desired

Instructions

  1. Prepare the Frozen Fruit Ice Cubes: Blend frozen mixed fruit with about 1/4 cup (60 ml) pineapple juice until smooth but thick. Pour into an ice cube tray and freeze for at least 4 hours or overnight.
  2. Mix the Base: In a pitcher or large glass, combine 1 cup (240 ml) fresh coconut water, 1/2 cup (120 ml) pineapple juice, and 1 tablespoon (15 ml) fresh lime juice. Stir well. Add 1 teaspoon honey or agave syrup if you prefer it sweeter and mix until dissolved.
  3. Assemble the Mocktail: Add 4–5 frozen fruit ice cubes to each serving glass. Pour the coconut water and pineapple mixture over the cubes.
  4. Final Touch: Top with plain ice cubes if you want it extra chilled. Garnish with fresh mint leaves.
  5. Serve Immediately: Stir gently before drinking to enjoy the slowly melting frozen fruit ice cubes releasing bursts of flavor.

Notes

Freeze the fruit ice cubes solid for best flavor and texture. Adjust sweetness to taste. For a fizzy version, replace half the coconut water with sparkling water before serving. Prepare frozen fruit ice cubes a day ahead for convenience.
