  • 1 medium English cucumber, thinly sliced

Instructions

  1. Whip the Dill Butter: In a mixing bowl, combine 1/2 cup softened unsalted butter with 2 tablespoons finely chopped fresh dill, 1 teaspoon lemon juice, 1/4 teaspoon sea salt, and a pinch of black pepper. Beat with a hand mixer or whisk until light and fluffy, about 2-3 minutes.
  2. Prepare the Bread: Lay out 8 slices of white sandwich bread and carefully trim off the crusts with a sharp serrated knife. Spread a generous, even layer (about 1 tablespoon) of the dill butter on each slice, covering every corner.
  3. Slice the Cucumbers: Using a sharp knife or mandoline, slice the English cucumber as thinly as possible (about 1/8 inch thick). Pat the slices dry with paper towels if very watery.
  4. Assemble the Sandwiches: Arrange cucumber slices evenly on 4 of the buttered bread slices, overlapping slightly but not piling too high. Top each with one of the remaining buttered bread slices, butter side down. Press gently to adhere.
  5. Cut and Garnish: Cut each sandwich into 2 or 3 small rectangles or triangles. Sprinkle with finely chopped fresh chives or parsley if desired.
  6. Chill Before Serving: Cover the sandwiches loosely with plastic wrap and refrigerate for 15-20 minutes before serving to firm up the butter and keep fresh.
