  • 1 package (3 ounces / 85 grams) strawberry flavored gelatin powder
  • 2 cups (480 ml) whole milk
  • 1 cup (240 ml) heavy whipping cream
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup (120 ml) cold water
  • 1/2 cup fresh strawberries, chopped (optional)

Instructions

  1. Pour 1/2 cup cold water into a medium bowl. Sprinkle the strawberry gelatin powder evenly over the water’s surface to avoid clumps. Let it sit for 5 minutes to bloom.
  2. In a small saucepan, warm 2 cups of whole milk over medium heat until just hot but not boiling (about 160°F). Stir in 2 tablespoons of granulated sugar until dissolved. Remove from heat.
  3. Add the hot milk mixture slowly to the bloomed gelatin, whisking continuously until the gelatin is fully dissolved and the mixture is smooth. Stir in 1 teaspoon vanilla extract. Set aside to cool to room temperature (about 15-20 minutes).
  4. While the gelatin mixture cools, whip 1 cup of heavy cream in a chilled bowl using an electric mixer until soft peaks form. Be careful not to overwhip.
  5. Once the gelatin mixture has cooled but not set, gently fold the whipped cream into the gelatin mixture using a spatula to keep the fluffy texture intact.
  6. Transfer the mixture into serving glasses or a large bowl. Refrigerate for at least 3 hours, or until set but still soft and jiggly.
  7. Just before serving, top with fresh chopped strawberries or a dollop of extra whipped cream if desired.

Notes

Let the gelatin mixture cool to just above room temperature before folding in the whipped cream to avoid melting or premature setting. Whip cream to soft peaks only. If gelatin starts to set too soon, gently warm over a double boiler to loosen before folding in cream. Best served chilled but slightly softened by removing from fridge 10 minutes before serving. Store leftovers covered in fridge up to 3 days; freezing is not recommended.
