  • 1 cup (227 grams) unsalted butter, softened (recommend European-style butter like Plugrá)
  • 2 to 3 tablespoons (3045 ml) honey (raw or wildflower honey preferred)
  • 1 teaspoon (5 ml) pure vanilla extract
  • Pinch of sea salt (about 1/8 teaspoon)
  • Optional: dash of cinnamon or splash of lemon juice

Instructions

  1. Soften the butter by letting 1 cup (227 grams) of unsalted butter sit at room temperature for about 30 minutes until soft but not melted.
  2. Place the softened butter in a chilled medium mixing bowl. Using an electric mixer on medium speed, beat the butter for 2-3 minutes until pale and fluffy.
  3. Gradually add 2 to 3 tablespoons (30-45 ml) of honey while continuing to whip until the mixture is glossy and smooth. Taste and adjust sweetness if desired.
  4. Add 1 teaspoon (5 ml) of pure vanilla extract and a pinch (about 1/8 teaspoon) of sea salt. Whip for another 1-2 minutes until fully incorporated and light.
  5. If desired, fold in a dash of cinnamon or a splash of lemon juice and beat just enough to mix.
  6. Spoon the fluffy honey butter into a clean jar or container and chill for at least 30 minutes to firm up slightly. It is spreadable immediately but chills better.

Notes

Use room temperature butter for best whipping results. If butter is too cold, it won’t whip well; if too warm, it will be greasy. Chill the butter after whipping to help it hold shape and intensify flavors. For dairy-free version, use plant-based spread and maple syrup instead of honey. Avoid over-whipping to prevent separation.
