  • ¾ cup (170 g) unsalted butter, cold and cubed

  • 1 teaspoon vanilla extract
  • 1 cup (150 g) fresh strawberries, hulled and chopped
  • 1 teaspoon orange zest, finely grated
  • For the glaze:
  • 1 cup (120 g) powdered sugar
  • 2 tablespoons fresh orange juice
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together 2 ¾ cups all-purpose flour, 1 tablespoon baking powder, ⅓ cup granulated sugar, and ½ teaspoon salt.
  3. Add ¾ cup cold, cubed unsalted butter to the dry mix. Cut the butter into the flour using a pastry cutter or fingertips until the mixture resembles coarse crumbs with pea-sized lumps.
  4. Gently fold in 1 cup chopped fresh strawberries and 1 teaspoon orange zest, being careful not to mash the berries.
  5. In a separate bowl, whisk together 1 cup heavy cream and 1 teaspoon vanilla extract until well blended.
  6. Pour the cream mixture into the flour-butter-strawberry bowl. Gently fold the mixture with a spatula just until it comes together; do not overmix.
  7. Turn the dough out onto a lightly floured surface. Pat it into a 1-inch thick circle about 8 inches in diameter.
  8. Cut the circle into 8 equal wedges using a sharp knife or bench scraper.
  9. Place the wedges onto the prepared baking sheet, spacing them about 2 inches apart.
  10. Bake for 18-22 minutes until the tops are golden and a toothpick inserted comes out clean.
  11. While the scones bake, whisk together 1 cup powdered sugar, 2 tablespoons fresh orange juice, and ½ teaspoon vanilla extract in a small bowl until smooth.
  12. Once the scones are slightly cooled (about 10 minutes), drizzle the orange vanilla glaze over the tops and let set for a few minutes before serving.

Notes

Keep butter and cream cold to ensure flaky, fluffy scones. Do not overmix the dough to avoid dense scones. Use fresh, ripe but firm strawberries for best texture. If dough is too sticky, chill for 10 minutes before cutting. Apply glaze when scones are warm, not hot, for best adhesion.
