Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until well combined.
  2. In a separate bowl, whisk together the buttermilk, beaten egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently with a spatula or spoon just until combined. The batter should be lumpy but moist; do not overmix.
  4. Let the batter rest for 5 minutes while preheating a skillet over medium heat.
  5. Lightly grease the skillet with butter or cooking spray. Using a ¼ cup measuring cup or ladle, pour batter onto the hot skillet.
  6. Cook for 2–3 minutes until bubbles form on the surface and edges look set.
  7. Flip carefully with a thin spatula and cook for another 1–2 minutes until golden brown and cooked through.
  8. Transfer cooked pancakes to a plate and tent loosely with foil to keep warm. Repeat with remaining batter.
  9. Serve stacked pancakes drizzled with maple syrup and topped with fresh berries. Optionally add a pat of butter.

Notes

Do not overmix the batter to keep pancakes fluffy. Let the batter rest for 5 minutes before cooking. Cook on medium heat to avoid burning. Keep cooked pancakes warm in a 200°F oven if making a large batch. For buttermilk substitute, mix 1 tablespoon vinegar or lemon juice with 1 ¼ cups milk and let sit 5 minutes.
