Instructions

  1. In a large bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and granulated sugar.
  2. In a separate bowl, whisk together buttermilk, egg, melted unsalted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined; lumps are okay.
  4. Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or non-stick spray.
  5. Using a ladle or ¼ cup measuring cup, pour batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  7. Flip carefully and cook the other side until golden brown, about 1-2 minutes.
