A quick and easy summer dessert featuring caramelized grilled peaches paired with creamy mascarpone and a drizzle of honey, perfect for backyard barbecues and light sweet treats.

Ingredients

Scale
  • 4 medium ripe peaches, halved and pitted
  • 3 tablespoons honey (raw clover honey preferred)
  • 1 cup mascarpone cheese, softened
  • 2 tablespoons olive oil or melted butter (for brushing peaches)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract (optional)
  • Fresh mint or basil leaves for garnish
  • Pinch of sea salt

Instructions

  1. Rinse peaches under cool water and pat dry. Slice each peach in half and remove the pit. Brush cut sides with olive oil or melted butter.
  2. Heat grill pan over medium-high heat for 3 to 5 minutes until hot but not smoking.
  3. Place peaches cut side down on the grill pan. Grill for 3 to 4 minutes without moving to develop caramelized grill marks.
  4. Flip peaches carefully and grill skin side for another 2 minutes until warmed through but still holding shape.
  5. While peaches grill, combine mascarpone, lemon juice, and vanilla extract in a bowl. Stir gently until smooth and slightly loosened but not runny.
  6. Arrange grilled peaches on serving plates. Dollop or spread mascarpone mixture next to or on top of peaches.
  7. Drizzle generously with honey and sprinkle with sea salt and fresh mint or basil leaves.
  8. Serve immediately warm or at room temperature.

Notes

Use peaches that are firm but slightly soft to the touch for best grilling results. Oil the peaches, not the pan, to prevent sticking and excess smoke. Do not overmix mascarpone to avoid runniness. Serve immediately for best contrast between warm peaches and cool mascarpone. Leftovers can be refrigerated separately and reheated gently.
