  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon honey or maple syrup (optional)

Instructions

  1. Soften the butter by leaving 1 cup (227g) of unsalted butter out at room temperature for about 30 minutes until soft but not melted.
  2. While butter softens, finely chop about 2 tablespoons of fresh herbs (parsley, chives, thyme). Roast or mince 2-3 garlic cloves, zest one lemon, and grate ¼ cup (25g) Parmesan cheese if using.
  3. In a medium bowl, whip the softened butter using a hand mixer or fork until creamy and light, about 2-3 minutes.
  4. Divide the whipped butter into four equal portions.
  5. To each portion, add specific flavor ingredients:
  6. – Herb & Garlic: Mix in chopped herbs, roasted garlic, a pinch of salt, and pepper.
  7. – Lemon & Parmesan: Stir in lemon zest, Parmesan cheese, salt, and pepper.
  8. – Sun-Dried Tomato & Herb: Incorporate chopped sun-dried tomatoes, herbs, garlic, salt, and pepper.

  10. Spoon each flavored butter onto plastic wrap or parchment paper. Roll into logs about 1½ inches (4 cm) in diameter, twisting ends tightly.
