Flavorful Caprese Grilled Chicken Recipe with Easy Balsamic Glaze

A quick and easy grilled chicken recipe inspired by classic Caprese salad, topped with fresh mozzarella, tomatoes, basil, and a tangy balsamic glaze. Perfect for summer gatherings and weeknight dinners.

  • 1.5 pounds boneless, skinless chicken breasts
  • 8 ounces fresh mozzarella, sliced
  • 2 large Roma or vine-ripened tomatoes, sliced
  • A handful fresh basil leaves, washed and dried
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • ½ cup (120 ml) balsamic vinegar
  • 1 tablespoon honey or brown sugar
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine 2 tablespoons olive oil, minced garlic, salt, and pepper. Add chicken breasts and toss to coat evenly. Let marinate at room temperature for 15 minutes or refrigerate up to 2 hours.
  2. Pour ½ cup balsamic vinegar and 1 tablespoon honey or brown sugar into a small saucepan. Bring to a gentle boil over medium heat, then reduce to low and simmer for 10–15 minutes, stirring occasionally until thickened to a syrupy consistency. Remove from heat and set aside.
  3. Preheat grill or grill pan to medium-high (about 400°F / 204°C). Clean and lightly oil grates to prevent sticking.
  4. Place marinated chicken on the grill. Cook for about 6–7 minutes per side, until internal temperature reaches 165°F (74°C). Avoid pressing down on the chicken.
  5. During the last 2 minutes of grilling, top each chicken breast with a slice of fresh mozzarella and tomato. Close the grill lid or cover with a pan lid to help cheese melt.
  6. Remove chicken from grill. Scatter fresh basil leaves on top and drizzle generously with the balsamic glaze.
  7. Serve immediately while warm, optionally with a light green salad or grilled vegetables.

Notes

Use a meat thermometer to ensure chicken is cooked to 165°F for juiciness. Marinate chicken for at least 15 minutes for best flavor. The balsamic glaze can be prepared ahead and stored in the fridge for up to a week. For dairy-free option, omit mozzarella or use plant-based cheese. If no grill is available, broil chicken in oven as an alternative.
