A sweet, vibrant dessert featuring a buttery sugar cookie base topped with a creamy cream cheese layer and fresh mixed berries, perfect for summer parties and spring gatherings.

Ingredients

Scale
  • 1 batch sugar cookie dough (store-bought or homemade)
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed fresh berries (strawberries sliced, blueberries, raspberries, blackberries)
  • Optional: mint leaves or edible flowers for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet or pizza pan with parchment paper.
  2. Roll out the sugar cookie dough onto the parchment paper into a roughly 12-inch circle, about 1/4 inch thick.
  3. Bake the cookie crust for 12-15 minutes, until the edges just start to turn golden but the center is still soft.
  4. Remove from oven and let the cookie cool completely on the baking sheet.
  5. In a mixing bowl, beat 8 oz softened cream cheese with 1/2 cup powdered sugar and 1 teaspoon vanilla extract until smooth and creamy.
  6. Spread the cream cheese mixture evenly over the cooled sugar cookie base to about 1/4 inch thickness.
  7. Arrange fresh berries on top of the cream cheese layer, alternating colors and shapes for a vibrant look.
  8. Garnish with mint leaves or edible flowers if desired.
  9. Chill the fruit pizza in the fridge for at least 30 minutes before serving.

Notes

Chill the cookie completely before spreading cream cheese to prevent melting. Pat berries dry if very juicy to avoid sogginess. Prepare cream cheese layer ahead for convenience. Use room temperature cream cheese for smooth mixing.
