Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a medium bowl, toss the peeled and deveined shrimp with 2 tablespoons olive oil, smoked paprika, chili powder, cumin, garlic powder, salt, and pepper until evenly coated.
  3. Line a rimmed baking sheet with parchment paper. Spread out the sliced bell peppers and onions on the sheet. Drizzle with 1 tablespoon olive oil, sprinkle with salt and pepper, and toss lightly to coat. Arrange in an even layer, leaving space for the shrimp.
  4. Nestle the seasoned shrimp among the peppers and onions in a single layer, avoiding overcrowding.
  5. Roast in the oven for 10-12 minutes. Halfway through (around 5-6 minutes), use tongs to flip the shrimp and stir the veggies for even roasting. Shrimp should be pink and opaque with slight browning; peppers tender but still slightly crisp.
  6. Check for doneness and avoid overcooking to prevent rubbery shrimp.
  7. Warm tortillas by wrapping them in foil and placing in the oven for the last 5 minutes or heating quickly on a dry skillet.
