A quick and festive fruit pizza on a sugar cookie crust topped with cream cheese frosting and fresh berries arranged in a patriotic flag design. Perfect for summer holidays and easy to make in under 30 minutes.

Ingredients

Scale
  • 1 pre-made sugar cookie dough disk (about 12 ounces / 340 grams), chilled
  • 8 ounces (225 grams) cream cheese, softened
  • 3/4 cup (90 grams) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 tablespoons (30 ml) heavy cream or milk
  • 1 cup (150 grams) fresh blueberries, washed and dried
  • 1 1/2 cups (225 grams) fresh strawberries, hulled and sliced
  • 1 medium banana, sliced thinly (optional)
  • Red and blue food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper or lightly grease it to prevent sticking.
  2. Roll out the chilled sugar cookie dough into a roughly 12-inch (30 cm) circle. If the dough feels too soft, chill for 10 minutes before rolling. Transfer dough to prepared pan and prick surface lightly with a fork.
  3. Bake the crust for 12-15 minutes until edges are lightly golden and center is set but not browned. Cool completely on a rack (about 30 minutes).
  4. In a medium bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth and fluffy. Add heavy cream or milk and mix until creamy but thick enough to spread.
  5. Optional: Divide cream cheese topping into two bowls and tint one with red or blue food coloring for colorful stripes.
  6. Spread cream cheese mixture evenly over cooled crust. Arrange blueberries in a rectangle in the upper left corner for the stars section. Arrange sliced strawberries in horizontal rows beside and below blueberries for red stripes. Use banana slices or leave white space between strawberry rows for white stripes.
  7. Chill the fruit pizza in the fridge for at least 30 minutes before serving to set the topping and meld flavors.

Notes

Cool the crust completely before adding the cream cheese topping to prevent melting and sogginess. Pat dry fruit before arranging to avoid excess moisture. Chill assembled pizza before serving for best texture and flavor. Can prepare crust a day ahead. Use fresh berries for best results. Optional food coloring adds visual appeal but is not necessary.
