  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack or mozzarella cheese

  • Optional mix-ins:
  • 1/3 cup diced bell peppers (red or green)
  • 1/2 cup cooked and crumbled bacon or sausage
  • 1/3 cup chopped fresh spinach or kale
  • 2 tablespoons chopped green onions or chives
  • Non-stick cooking spray or butter for greasing the muffin tin

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your muffin tin thoroughly with non-stick spray or softened butter.
  2. In a large mixing bowl, whisk together 8 large eggs and 1/4 cup (60 ml) milk gently until just combined; avoid overbeating.
  3. Stir in 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper. Taste to ensure light seasoning.
  4. Prepare any optional mix-ins by chopping vegetables finely and precooking bacon or sausage until crisp. Drain excess fat.
  5. Fold in 1 cup shredded sharp cheddar and 1/2 cup shredded Monterey Jack or mozzarella cheese, reserving a little cheese for topping.
  6. Pour the egg mixture evenly into the 12 muffin cups, filling each about 3/4 full. Sprinkle reserved cheese on top of each cup.
  7. Bake on the middle rack for 18-22 minutes until eggs are set but still moist. Test doneness by inserting a toothpick; it should come out clean.
  8. Let the muffin cups cool for 5 minutes before removing from the tin to help them hold together.
  9. Serve warm or cool completely and store in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months.
