  • 34 fresh garlic cloves, minced
  • 1/4 cup (60ml) soy sauce (regular or low-sodium)
  • Optional: 1 teaspoon rice vinegar or lemon juice
  • Optional: 1/2 teaspoon red pepper flakes

Instructions

  1. Measure out 1/4 cup honey, 1/4 cup soy sauce, and mince 3-4 garlic cloves finely.
  2. Heat a small saucepan over medium heat without oil.
  3. Add minced garlic and sauté for 30 seconds to 1 minute until fragrant but not browned.
  4. Pour in honey and soy sauce, stirring immediately to combine.
  5. Let the sauce simmer for 3-5 minutes, stirring frequently until it thickens slightly and becomes glossy.
  6. If desired, add rice vinegar or lemon juice in the last minute of cooking and stir well.
  7. Taste and adjust sweetness or saltiness by adding more honey or soy sauce if needed.
  8. Remove from heat and let cool slightly before using or storing.

Notes

Do not overcook garlic to avoid bitterness. Simmer gently to prevent honey from burning or crystallizing. Adjust thickness by simmering longer or adding a splash of water or soy sauce. Store leftovers in an airtight container in the fridge for up to one week and warm gently before use.
