These fudgy brownie mix cookies are shaped and decorated to look like graduation caps, making a quick, festive, and crowd-pleasing treat perfect for graduation parties.

Ingredients

Scale
  • 1 standard 18.3-ounce box fudgy brownie mix (e.g., Ghirardelli)
  • 2 large eggs, room temperature
  • 1/3 cup vegetable oil
  • 1/4 cup water
  • 1 cup powdered sugar
  • 4 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk
  • Black food coloring, a few drops
  • Mini chocolate sandwich cookies or Oreo halves (optional)
  • Candy pearls or colored sprinkles
  • Toothpicks or pretzel sticks

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, combine the brownie mix, 2 large eggs, 1/3 cup vegetable oil, and 1/4 cup water. Stir until just combined; do not overmix.
  3. Using a tablespoon or cookie scoop, drop dough balls onto the prepared baking sheet about 2 inches apart. Flatten each ball gently to form roughly 2.5-inch circles.
  4. Bake for 10-12 minutes until edges look set but centers remain soft and fudgy. Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
  5. Make the frosting by beating 4 tablespoons softened butter with 1 cup powdered sugar, 1 teaspoon vanilla extract, and 1 tablespoon milk. Add black food coloring drop by drop until deep black. Add more milk if needed for spreadability.
  6. Once cookies are cooled, optionally place a mini chocolate sandwich cookie half in the center of each cookie, then spread a thin layer of black frosting over the top to form the ‘cap.’
  7. Attach a candy pearl or colored sprinkle to the center of the cap with a small dab of frosting. Insert a toothpick or pretzel stick next to it as the tassel stem. Add a small frosting line connecting the candy to the side of the cap for detail.
  8. Allow the decorated cookies to rest for 30 minutes so the frosting firms up before serving.

Notes

Do not overbake to keep cookies fudgy. Use room temperature eggs for smooth batter. Flatten dough balls gently to avoid spreading too thin. If frosting softens while decorating, chill it in the fridge for 10 minutes. Chilling dough before baking helps maintain shape in warm kitchens. Customize decorations with different candies or colors. For gluten-free or dairy-free versions, use appropriate brownie mixes and butter substitutes.
