  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon all-purpose flour
  • 1 large egg, beaten

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a mixing bowl, combine diced apples, brown sugar, cinnamon, lemon juice, flour, and nutmeg if using. Toss until apples are well coated.
  3. On a lightly floured surface, unfold one sheet of thawed puff pastry. If stiff, gently roll it out. Cut into 4 equal squares (about 5×5 inches each).
  4. Spoon 2-3 tablespoons of apple filling onto the center of each square, avoiding overfilling.
  5. Brush the edges of each square with melted butter. Fold pastry diagonally to form a triangle and press edges firmly to seal. Crimp edges with a fork.
  6. Brush the tops of turnovers with beaten egg for a golden finish.
  7. Place turnovers on the prepared baking sheet and bake for 20-25 minutes until puffed and golden brown. Check at 18 minutes to avoid over-browning.
  8. Let turnovers cool on the baking sheet for 10 minutes before transferring to a wire rack to set.
