  • 2 large eggs, room temperature
  • 6 tbsp (85g) unsalted butter, melted
  • ½ cup (100g) brown sugar
  • ½ cup (65g) all-purpose flour (or almond flour for gluten-free)
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • Maple syrup for drizzling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together pancake mix, milk, eggs, vanilla extract, and salt until just combined; lumps are okay.
  3. Grease a 9×13-inch baking dish with butter or spray to prevent sticking.
  4. Pour half the batter into the baking dish and spread evenly.
  5. In a separate bowl, combine brown sugar, flour, and cinnamon. Add melted butter and stir until mixture forms coarse crumbs.
  6. Sprinkle half the streusel topping evenly over the batter layer.
  7. Pour the remaining batter over the streusel layer.
  8. Top with the remaining streusel evenly.
  9. Bake for 30-35 minutes until golden brown, puffed, and set in the center; a toothpick inserted should come out mostly clean.
  10. Remove from oven and let cool for 5-10 minutes.
  11. Drizzle generously with real maple syrup before serving.

Notes

Do not overmix the batter to keep it tender; lumps are fine. Use room temperature eggs and milk for even baking. If streusel browns too fast, tent with foil halfway through baking. For extra crunch, add chopped nuts to streusel. Drizzle maple syrup only after baking to avoid sogginess. The casserole can be assembled the night before and baked in the morning with a few extra minutes added to baking time.
