  • 8 ounces (225g) cream cheese, softened
  • 2 cups (200g) shredded sharp cheddar cheese
  • 1 ½ cups (150g) Bisquick or self-rising baking mix (gluten-free baking mix for gluten-free option)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper, freshly ground if possible
  • Optional: ¼ teaspoon cayenne pepper

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, combine the sausage and softened cream cheese. Mix thoroughly with an electric mixer on medium speed or a sturdy spoon until smooth and well combined, about 2–3 minutes.
  3. Add shredded cheddar cheese, baking mix, garlic powder, onion powder, black pepper, and cayenne pepper (if using). Stir gently until evenly mixed, avoiding overmixing.
  4. Roll the mixture into 1-inch (2.5 cm) balls using a small cookie scoop or lightly oiled hands. This should take about 10 minutes.
  5. Place the sausage balls on the prepared baking sheet, spacing them about 1 inch (2.5 cm) apart.
  6. Bake for 25–30 minutes, or until golden brown and cooked through. Use a meat thermometer to check for an internal temperature of 160°F (71°C) if desired.
  7. Remove from the oven and let cool for about 5 minutes before serving.
