These playful, colorful pita pizzas are a family-friendly recipe that doubles as an edible art project. Packed with wholesome ingredients and vibrant veggie swirls, they’re easy to make, fun for kids, and perfect for parties or weeknight dinners.

  • 6 whole wheat pita breads (56 inch rounds, pocketless preferred)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1/2 cup pizza sauce or marinara
  • 1/4 cup pesto
  • 3 tablespoons beet puree (about 1 small beet, roasted and blended)
  • 3 tablespoons carrot puree (about 1 medium carrot, steamed and blended)
  • 3 tablespoons spinach or kale puree (about 1/2 cup greens, wilted and blended)
  • 1/4 cup Greek yogurt (optional, for creamy swirls)
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced yellow bell pepper
  • 1/2 cup diced orange bell pepper
  • 1/2 cup finely chopped baby spinach
  • 1/3 cup sweet corn kernels (fresh or thawed frozen)
  • 1/4 cup thinly sliced red onion
  • 1/2 cup halved cherry tomatoes
  • Optional: sliced black olives, purple cabbage shreds, or other colorful veggies
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Red pepper flakes (optional, for adults)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Lay out pita breads in a single layer and brush each lightly with olive oil.
  2. In small bowls, prepare the rainbow swirl sauces: pizza sauce, pesto, beet puree, carrot puree, and spinach/kale puree. If desired, blend Greek yogurt into the purees for creaminess. Stir well.
  3. Spoon or pipe dollops of each colored sauce onto the pitas. Use a mini spatula, knife, or spoon to gently swirl the colors together, being careful not to over-mix.
  4. Sprinkle shredded mozzarella and cheddar evenly over each pita, leaving some swirl edges visible. Scatter diced peppers, spinach, corn, tomatoes, onions, and any other veggies on top. Season with oregano, salt, pepper, and optional red pepper flakes.
  5. Bake for 8-10 minutes, or until cheese is melted and bubbly and pita edges are golden and crisp. If using two baking sheets, rotate halfway through. Let cool for 2 minutes, then slice and serve.

Notes

For gluten-free, use gluten-free pita or naan. For dairy-free, use plant-based cheese and omit yogurt. Swirl sauces gently to keep colors vibrant. Set up a topping bar for parties. Leftovers keep in the fridge for up to 3 days and reheat well in the oven or air fryer.
