Ingredients

Scale
  • 12 fresh strawberries (washed and dried, stems on for dipping if possible)
  • 3 oz dark chocolate (about 1/2 cup, chopped)
  • 2 oz milk chocolate (about 1/3 cup, chopped)
  • 1 tsp coconut oil or vegetable oil (optional)
  • 1 1/2 cups heavy whipping cream (cold)
  • 3 tbsp powdered sugar
  • 1 tsp pure vanilla extract
  • 1 1/2 cups chopped fresh strawberries (hulled and diced)
  • 1 1/2 cups vanilla wafer cookies or shortbread cookies (crushed; about 6 oz)
  • 1/2 cup strawberry jam or preserves
  • Optional: extra shaved chocolate or mini chocolate chips
  • Optional: fresh mint leaves
  • Optional: crushed freeze-dried strawberries

Instructions

  1. Line a small tray with parchment paper.
  2. In a microwave-safe bowl, combine dark and milk chocolate with coconut oil (if using). Microwave in 20-second bursts, stirring between each, until smooth and glossy, or melt gently over a double boiler.
  3. Hold each strawberry by the stem and dip two-thirds of the way into the melted chocolate, letting excess drip off. Lay on the tray to set. For a thicker shell, dip a second time after the first layer hardens.
  4. Chill dipped strawberries in the fridge for 10 minutes, until firm.
  5. In a chilled mixing bowl, pour the heavy cream. Beat on medium-high until soft peaks form (about 2-3 minutes).
  6. Add powdered sugar and vanilla extract. Continue beating until stiff peaks form—do not overbeat.
  7. Hull and dice the remaining strawberries into bite-size pieces. Toss with a teaspoon of sugar if desired.
  8. Crush the cookies in a zip-top bag with a rolling pin or your hands, leaving some larger bits for crunch.
  9. Spoon a layer of crushed cookies into the bottom of each jar (about 2 tablespoons).
  10. Add a spoonful of whipped cream (2-3 tablespoons), then a layer of chopped strawberries (2 tablespoons).
  11. Drizzle with a teaspoon of strawberry jam, followed by another layer of cookies and cream.
  12. Continue layering until jars are nearly full, finishing with a generous dollop of whipped cream.
  13. Just before serving, top each jar with a chocolate-dipped strawberry.
  14. Garnish with shaved chocolate, mini chips, crushed freeze-dried strawberries, and/or a mint leaf if desired.

Notes

For best results, use super dry strawberries for dipping and chill your bowl and beaters before whipping cream. Assemble jars up to a day ahead (without the chocolate-dipped strawberries) and add the berries just before serving. Swap in gluten-free cookies or coconut cream for dietary needs. The recipe is forgiving—layer as you like and have fun with garnishes.
