  • 1 sheet frozen puff pastry (thawed, preferably all-butter)
  • 3 tablespoons granulated sugar (divided)
  • Optional: pinch of cinnamon or vanilla extract

Instructions

  1. Thaw the puff pastry by leaving it on the counter for 30-40 minutes until pliable but still cold.
  2. Lightly dust your countertop with sugar instead of flour. Lay out one sheet of puff pastry.
  3. Using a rolling pin, gently roll the pastry into a smooth rectangle about 12×10 inches.
  4. Generously sprinkle about 2 tablespoons of granulated sugar evenly over the surface. Add a pinch of cinnamon if desired.
  5. Starting from the long edge, roll the dough tightly toward the center. Repeat with the opposite side so both edges meet in the middle.
  6. Lightly sprinkle another 1 tablespoon of sugar on top, then fold the dough in half so the two rolled edges are touching. Wrap tightly in plastic wrap.
  7. Refrigerate the dough log for at least 30 minutes to firm up.
  8. Remove from fridge and slice the log into 1/4-inch thick slices using a sharp knife or pizza cutter.
  9. Lay each slice flat on a parchment-lined baking sheet, leaving space between slices.
  10. Sprinkle a little extra sugar on top of each palmier.
  11. Bake in a preheated oven at 400°F for 12-15 minutes or until golden brown and caramelized.
  12. Transfer the palmiers to a cooling rack and let cool completely to harden the caramelized sugar shell.
