  • 2 teaspoons everything bagel seasoning (or mix 1 tsp sesame seeds, 1 tsp poppy seeds, 1/2 tsp dried minced garlic, 1/2 tsp dried minced onion, and a pinch of coarse salt)
  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 teaspoon salt (kosher salt recommended)
  • Pinch of freshly ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Drain and rinse the chickpeas thoroughly using a colander under cold water for about 30 seconds.
  3. Spread chickpeas on a clean kitchen towel or paper towels and pat dry thoroughly to remove moisture.
  4. Optionally, remove loose skins by gently rubbing chickpeas between your hands or the towel.
  5. Transfer chickpeas to a mixing bowl and add olive oil, everything bagel seasoning, smoked paprika (if using), salt, and black pepper. Toss well to coat evenly.
  6. Spread chickpeas in a single layer on a rimmed baking sheet lined with parchment paper or a non-stick surface, avoiding overcrowding.
  7. Roast for 25-30 minutes, stirring or shaking the pan halfway through (around 15 minutes) for even browning.
  8. Remove from oven when golden and toasty smelling. Let cool completely on the baking sheet to crisp up further.
  9. Store in an airtight container at room temperature for up to 3 days.
