  • 1 cup shredded Monterey Jack cheese or Swiss (about 1/3 cup)
  • 1 tablespoon pureed spinach (for green stripe, squeeze out extra water)
  • 1 tablespoon pureed roasted red peppers (for red stripe, pat dry)
  • 1/2 teaspoon ground turmeric (for yellow stripe)
  • Pinch of salt and pepper (optional, to season cheese layers)
  • 2 tablespoons mayonnaise (optional, for extra-crispy bread)

Instructions

  1. In three small bowls, divide the shredded mozzarella cheese evenly.
  2. Mix pureed spinach into one bowl for green, roasted red pepper puree into another for red, and turmeric into the third for yellow. Stir until cheese is evenly colored.
  3. Blend cheddar and Monterey Jack with mozzarella for richer flavor and brighter color, if desired. Season each cheese portion with a pinch of salt and pepper.
  4. Spread a thin layer of softened butter (or mayo) on one side of each bread slice. Set aside, buttered side up.
  5. Place three slices of bread, buttered side down, on a clean surface.
  6. Layer green cheese on the bottom third of each slice, yellow cheese in the middle third, and red cheese on the top third.
  7. Top with remaining bread slices, buttered side up. Press gently.
  8. Preheat a skillet or griddle over medium-low heat for 2 minutes.
  9. Place sandwiches in the pan, leaving space between them. Cook for 3–4 minutes per side, pressing lightly with a spatula.
  10. Flip carefully to keep color stripes intact. Cover pan loosely with a lid if needed to help cheese melt.
  11. Check for gooey, stretchy cheese. If not melted, cover for 1 extra minute.
  12. Transfer sandwiches to a cutting board, let cool for 1 minute, then slice diagonally to show off the triple-color stripes. Serve hot.
