A comforting and easy-to-make side dish featuring fluffy mashed Yukon Gold potatoes blended with sweet roasted garlic, butter, cream, and milk for a rich, silky texture.

Ingredients

Scale
  • 4 pounds Yukon Gold potatoes, peeled and cut into chunks
  • 1 whole head of garlic
  • 4 tablespoons unsalted butter, softened
  • 1/2 cup heavy cream
  • 1/2 cup whole milk
  • Salt and freshly ground black pepper to taste
  • Fresh chives or parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves, drizzle with olive oil, then wrap in foil. Roast for 35-40 minutes until soft and golden.
  2. Place peeled and chopped potatoes in a large pot, cover with cold water, add a pinch of salt, bring to a boil, then simmer for 15-20 minutes until fork-tender. Drain well.
  3. Return potatoes to the pot or a large mixing bowl. Squeeze roasted garlic cloves out of skins and add to potatoes. Add softened butter, cream, and milk. Mash until smooth and creamy, avoiding overmixing.
  4. Season generously with salt and freshly ground black pepper to taste.
  5. Transfer to a serving bowl and garnish with chopped fresh chives or parsley. Serve hot.

Notes

Start boiling potatoes in cold water for even cooking. Roast garlic wrapped in foil to keep moist and prevent burning. Avoid overmixing potatoes to prevent gluey texture. Warm milk and cream slightly before adding for smoother texture. If potatoes are too thick, add warm milk to adjust consistency.
