  • 6 tablespoons unsalted butter (85 grams), softened
  • 1/2 cup heavy cream (120 ml), room temperature
  • 2 tablespoons white miso paste
  • 1/4 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons water

Instructions

  1. Prepare your ingredients: Measure out sugar, butter, cream, miso, salt, and vanilla. Have everything within reach because caramel waits for no one! (Approx. 5 minutes)
  2. Start the caramel: In your heavy-bottomed saucepan, combine the sugar and water. Place over medium heat and gently swirl the pan occasionally to dissolve the sugar evenly. Avoid stirring with a spoon, or you risk crystallization. Watch closely as it turns from clear to a beautiful amber color—this usually takes about 7–10 minutes.
  3. Add the butter: As soon as the sugar reaches a deep amber hue, remove the pan from heat and carefully whisk in the softened butter. The mixture will bubble vigorously—this is normal! Stir until the butter is fully melted and combined.
  4. Incorporate cream and miso: Slowly pour the room-temperature heavy cream into the caramel while whisking continuously. The caramel will bubble up again—just keep whisking until smooth. Then, add the white miso paste and sea salt, stirring until fully incorporated. The sauce should turn creamy and glossy.
  5. Finish with vanilla: Stir in the vanilla extract for that final layer of flavor.
  6. Cool and store: Let the sauce cool for 15–20 minutes before transferring it to a heatproof jar or container. It will thicken as it cools but stay pourable.
  7. Cleanup tip: While your sauce cools, soak your pan in warm soapy water to make cleanup easier—caramel can be stubborn otherwise!

Notes

Use medium heat to avoid burning sugar. Do not stir sugar before it dissolves to prevent crystallization. Use room temperature cream to avoid splattering. Add miso last to preserve flavor. If caramel hardens, gently warm and stir until smooth. For dairy-free, substitute heavy cream with full-fat coconut milk and butter with vegan margarine.
